An Abundant Saturday in the Wilderness

Our wilderness living is abundant in many ways.  Our life is busy, but simple.

We enjoy life’s simple pleasures regularly and enjoy sharing our adventures.  I will be posting an About Us page soon so that you can get an idea of our struggles and accomplishments and our travels to this wilderness environment we proudly call home.

I would just like to share with you a peak into what a relaxing night in the wilderness might look like this time of year….

We live off-grid in the northern Idaho wilderness and the end of last week into Saturday was pretty gray.  Gray means no sun – no power.  A conservative mind set is required to live off-grid if you wish to keep your expenses down.   On gray days if you are not conservative it is a requirement to run a generator to keep your batteries charged so that your house has power.  If the generator is running that is using fuel which is an added expense.  For us, it is not difficult to have a frugal, conservative mindset because that is how we choose to live.  While we built our home here in the Idaho wilderness we lived in a canvas wall tent for 8 1/2 months from May until December 11th.  We lived traditionally by lantern light for 8 1/2 months so your needs tend to change when you go back to traditional living practices.  It was the MOST amazing time of our lives.

So when you return from a primitive living environment (which I crave) to today’s form of living you take some of that primitive living with you.  Here is a little glimpse of what our Saturday evening looked like…..

On the menu for the night was sandwich bread, banana nut bread, donuts and I added a bonus of hot pretzels.

Ingredients
  • 4 C warm water
  • 2 pkgs active dry yeast
  • 1/2 C of hot water (100 degrees)
  • 1 Tbsp salt
  • 1/3 C sugar
  • 2 Tbsp Crisco melted (I use butter flavored)
  • 6 C Better Batter flour
Instructions
  1. Mix yeast, sugar, Crisco and hot water.
  2. Allow to sponge a bit and then add warm water.
  3. Slowly add flour 2 cups at a time while mixing well.
  4. The trick to gluten free bread is to heavily mix or beat.
  5. After you have thoroughly mixed all flour, separate your dough into two pans.
  6. Allow your bread to rise for an hour and 15 minutes.
  7. Set oven to 350 degrees and insert your bread pans into the oven. Allow to bake for an hour. Dependent on your oven you may need to keep your bread in a bit longer.

We make EVERYTHING from scratch in the wilderness including our own deodorant and laundry detergent.  There are too many preservatives in food and with it being essential for our son to be completely gluten free and dairy free we have decided not to take any chances.  There are too many hidden fillers and we have been burned several times.  Since it affects his health it is not worth the chance and we are healthier for it.

I encourage you to go 100% gluten free and casein free to see the affects it has on your child.  If you have a family member that is affected by Autism or Aspergers you will be able to receive financial aid from http://betterbatter.org on all their gluten free products.  I swear by Better Batter’s flour.  I use it cup for cup like I would regular flour and I have been able to use it to make everything and anything, including pie crust and flaky pastries.   When my son went 100% on the diet I very seriously got to meet my son for the 1st time.  He was unable to focus or sit still long enough to compose a sentence let alone have a conversation due to the affects from the dairy and gluten.  So I heavily encourage you to give it a whirl.  If you need help, have questions or just need some moral support and guidance – please don’t hesitate to contact me.
