End of Summer Recipe

Looking for a fun summer treat for a party with family. The following cake is perfect for almost any special diet. It’s gluten-free, dairy-free, soy- and (can be) nut-free. It’s also GAPS/SCD compliant and low oxalate. The texture is wonderful and the recipe is forgiving. You can add banana and make banana bread.

The following recipes are from Cooking to Heal by Julie Matthews (Certified Nutrition Consultant for special diets for children). She recommends being in charge of the dessert for a party so you can have a diet-compliant option that your family can enjoy.

Coconut Flour Vanilla Cake
¼ cups coconut flour
1 teaspoon sea salt
1/2 teaspoon baking soda
8 large pastured eggs
2/3 cup melted grass-fed ghee
1 cup raw honey
2 tablespoon vanilla extract
Preheat the oven to 330 degrees. Grease and flour two 8-inch cake pans. In a large bowl, combine the coconut flour, salt, and baking soda. In a medium bowl, whisk together the eggs, melted ghee, honey and vanilla extract. Blend the wet ingredients into the coconut flour mixture with a handheld mixer until thoroughly combined.

Bake for 35-40 minutes. Once inserted toothpick comes out dry (a few moist crumbs), cake is ready. Let cook in pan, then cool on rack. Frost after cake is cool. Choose from either Cashew or Coconut Cream Frosting.

Cashew Cream Frosting
1 1/2 cups of cashews
1 cup of water
2 teaspoons vanilla
7 dates
a tiny pinch of salt
Mix all ingredients in the blender on high to whip into a thick cashew cream. Spread on cake, and top with fresh organic blueberries and strawberries.

Coconut Whipped Cream Frosting
1 container of Coconut Cream (see Wilderness Family Naturals)
1 teaspoon honey
Put the container of coconut cream in the freezer to chill but not freeze (20-30 minutes). Pour cream into bowl and beat with electric hand mixer for several minutes until stiff like whipped cream. Spread on cake, and top with fresh organic blueberries and strawberries.

Back to school snacks… Gluten free of course…

Ok…  You will find that I am always experimenting with new recipes and ways to make my own ingredients such as dairy free cheese etc….

I love cooking Gluten-Free & Dairy Free because I too feel better eating less gluten and dairy.

Now back to school for us is right here in our home, but I am a woman and a mom and therefore we go after their hearts by means of their bellies, right??  At least I do…  I get great pleasure out of making new yummy dishes…

Now for those of you that like a quick breakfast here is something that can be made ahead and it doesn’t just have to be for breakfast….
